Crack Chicken Pasta



My family is pretty set in their ways when it comes to weeknight dinners. We've on the same schedule/rotation of recipes for years! I was ready to change it up a bit and found a chicken pasta recipe on Pinterest. It was soooo good. Everyone went back for a second helping and loved it!I changed just a few things up in the recipe to make it easier. See the ingredients list and recipe below!






ingredients
  • 10 ounces penne pasta

  • â–¢ 8 slices bacon, chopped OR 1 package of bacon bits

  • â–¢ 2-3 pounds boneless skinless chicken breast

  • â–¢ ½ yellow onion, minced

  • â–¢ 3 cloves garlic, minced - I used jarred/pre-minced

  • â–¢ 2 cups chicken broth

  • â–¢ 4 ounces cream cheese

  • â–¢ 1 packet dry ranch dressing

  • â–¢ 1 teaspoon salt

  • â–¢ 1 teaspoon black pepper

  • â–¢ 2 cups shredded cheddar cheese

One of the best things about this Crack Chicken pasta recipe is that it’s all made in one pot for easy cleanup! A dinner that everyone loves but is also easy to clean up after is a win in my book.

  1. Cook Pasta: Cook the pasta according to the package directions. Drain and rinse in cold water, then set aside.

  2. Cook Bacon: I simply used a bag of real bacon bits, but if you're feeling advantageous, cook bacon in a large pot, cook the bacon over medium high heat until it is just crispy, remove from the pot and place on a paper towel or

  3. Cook Chicken: Remove all but 1 tablespoon of the bacon grease from the pot. Cook chicken to 165 degrees. Remove and let rest. Slice into bite sized pieces for later.

  4. Cook Vegetables: Sautee onion and garlic.

  5. Combine Sauce Ingredients: Pour in the chicken broth, cream cheese, ranch packet, salt, pepper, and chopped cooked bacon. Then stir to incorporate everything well. Bring the creamy sauce to a gentle boil then reduce heat to low.

  6. Mix in Cheese and Pasta: Add in the shredded cheddar cheese and cooked pasta, stir to combine. Simmer everything together for about 5 minutes. Then toss in chicken

  7. Serve: Remove the pot from heat and serve the crack chicken penne pasta.
