The Best Carrot Cake!
🥕The bestttt carrot cake. It’s perfection. I’ve been making this for my husband for his birthday since we got married! ☕️ It’s my favorite with a cup of coffee for breakfast!

Did you see the secret ingredient? It’s the applesauce that’s a game changer. You can make this as a 3 layer cake, sheet cake or cupcakes!

Brooks’ Birthday Carrot Cake:
🥕 Preheat Oven to 350 degrees. Grease/Flour cake pan(s).
🥕Start with Cake:
Mix:
1 ¼ cups unsweetened applesauce
2 cups sugar
3 eggs
-Mix- then add:
2 cups all-purpose flour
1 teaspoon baking soda
1 ½ teaspoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
-Mix- then add:
2 cups grated carrots
1 cup shredded sweetened coconut
1/2 cup chopped nuts optional
1 tsp vanilla
1 cup crushed pineapple (do not drain)
-fold in- and disperse batter to pan(s)
🥕Bake for 25 mins (more or less depending on your oven)
🥕Cream Cheese Frosting:
1 cup butter softened
2 blocks cream cheese softened
-Blend well- then add
2 teaspoon vanilla
5 cups confectioners sugar
🥕sprinkles a few nuts on top if you’re feeling boujee!
